Photoshop Balks on an iBook?

Well, it's going to be a tradeout. 800 mHz should be sufficient, and we see PS running on G3 level machines all the time. The problem is OS X. Yes, more memory would help a great deal... ramp it up to at least 512. However, the best advice since you've already made the leap to OS X and Photoshop cs is to hold out -- save your pennies -- for a newer, faster machine. Sorry

OSX Loves Ram, I originally had 128 in my iBook g3 700mhz, and man was it slow! I added a 512MB stick of ram for a total of 640MB and it's made a huge difference. Adding more ram will speed things up when you're running multiple programs or when running large programs like photoshop editing large files. Although I've added a desktop computer to my arsenal since I bought the iBook 3 years ago, the iBook still sees frequent use editing images on the go, as well as a place to dump memory cards from my digital slr camera, which produces huge image files. It's not the snappiest machine for digital image editing, but it works amazingly well for editing 6mp images from my camera.
