There are two easy ways to do this. The first is to Ctrl+click the layer thumbnail of the text to load it as a selection. Then create a new layer and fill it with something approximating a mustard color. You would then set the layer blend mode to 'color'.
The other way is to grab a selection of the text in the same manner as above then hit Shift+Ctrl+C to 'copy merged' then paste that into a new layer with Ctrl+V. Next hit Ctrl+U to bring up the Hue/Saturation dialogue, check the 'colorize' box, and adjust to taste.
They are both pretty quick and simple. :)
